Tofu Stir-Fry

Ingredients:

  • 14 oz (400g) firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (or any cooking oil of your choice)
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 tablespoons oyster sauce (for a vegetarian/vegan version, use a vegan oyster sauce or substitute with hoisin sauce)
  • 1 tablespoon sesame oil
  • Optional: sliced green onions and sesame seeds for garnish
  • Cooked rice or noodles, to serve

Instructions:

  1. Pressing the Tofu: To get a firmer texture, drain the tofu from its packaging and wrap it in paper towels. Place something heavy, like a plate or a cutting board, on top of the tofu to press out excess moisture. Leave it for about 15-20 minutes.
  2. Marinate the Tofu: In a bowl, mix the soy sauce and cornstarch until the cornstarch dissolves. Add the cubed tofu and gently toss it in the marinade. Let it sit for at least 10 minutes.
  3. Heat the oil in a large skillet or wok over medium-high heat.
  4. Add the marinated tofu cubes to the hot skillet and cook until they turn golden and slightly crispy on all sides. Remove the tofu from the skillet and set it aside.
  5. In the same skillet, add a bit more oil if needed, and sauté the minced garlic and sliced onion until they become fragrant and translucent.

  7. Return the cooked tofu to the skillet with the vegetables.
  8. Add the oyster sauce and sesame oil to the mixture. Toss everything together, ensuring the tofu and vegetables are coated evenly with the sauce.
