Give your salad a zesty boost!   Spring has sprung, so give your oven a break.   Salad’s don’t have to be boring – this easy salad dressing pairs well with salads that are topped with fresh local fruits (peaches & strawberries), while still packing all the flavour! It’s super easy to make and chances are you already have all of the ingredients you need.

Ingredients:

• 1/4 cup freshly squeezed lemon juice
• 1 teaspoon grated lemon zest
• 1/4 cup olive oil
• 2 tablespoons balsamic vinegar
• 2 garlic cloves, minced
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1 teaspoon Dijon mustard

Directions:

In a small bowl whisk together all the ingredients. You can store in a mason jar in the fridge for up to 5 days or mix into your salad right away. For best results, allow salad dressing to cool in the fridge for an hour before serving with your salad.
